This is a really, super simple bread that you can pull together with minimal ingredients and time. It goes really well with any soup or stew, you can find my butternut squash soup here:

This quick bread is yeast-free, gluten free, and sugar free. It has only a handful of ingredients which makes it easy to pull together in a pinch.

Roasted Garlic and Herb Quick Bread Recipe


1/3 Cup                     Coconut Flour

2/3 Cup                    Brown Rice Flour

1/2 Cup                    Gluten Free All Purpose Flour (I use Bob’s Red Mill)

2 1/2 TSP                 Baking Powder

2                                Eggs

1/3 Cup                    Almond Milk

1/3 Cup                    Melted Butter

3 Cloves                  Roasted Garlic

1/2 Cup                    Fresh Herbs, Finely Chopped (Rosemary, Basil, Thyme, Oregano, etc.)

1 TSP                        Fresh Ground Pepper

1 TSP                        Olive Oil



I used a mixer, for the entirety of this recipe but feel free to use a wooden spoon and bowl.

Preheat oven to 300°F.

Line a baking sheet with parchment paper.

Combine flours and baking powder. Add eggs, almond milk, butter and mix to combine, be careful not to over mix the dough. Set aside 2 TBSP of fresh herbs. Add roasted garlic, herbs and pepper.

Once your dough is combined, roll it out of the bowl onto a floured surface, pat it down into a round about 1.5 inches thick.

Place your dough onto a parchment lined baking sheet. Spread oil over the top of dough then sprinkle the herbs that you set aside, pepper and salt onto the dough (the oil will make everything stick).

Bake at 300°F for 45 minutes to 1 hour or until a toothpick comes out clean.
