Breakfast and brunch are my favourite meals, partially because sky’s the limit, you can go savoury or sweet, you can make everything ahead of time or in the moment, and most of all, weekend breakfast and brunch is so relaxed. So make a cup of coffee, turn the radio on and enjoy the pleasure of cooking!

This brunch bowl is a take on a Mexican brunch bowl usually called Heuvos Rancheros. In this version, I layer together roasted sweet potatoes, spicy tomato black beans, guacamole, salsa, eggs, and tortilla chips.

I’ll outline here the recipes for the beans and the sweet potatoes and you can serve this with fresh avocado or guacamole. Find my hemp heart guac here. Totally omit the eggs if you want. I’ve made this with poached eggs and fried eggs, serve your eggs however you’d like.

Spicy Tomato Black Beans 

Ingredients

1 Can Black Beans (ensure your beans have no salt or anything added)

2 Tomatoes, diced

1 TBSP Cumin

1 TBSP Chili Powder (no salt added)

1/2 TSP Cayenne Pepper

1 TSP Black Pepper

1 TSP Himalayan Pink Salt

2 Cloves Garlic, minced

Instructions

In a pot, combine all of your ingredients, add enough water to cover the mixture. Simmer everything together for as long as possible. I often make this the night before we have people over for brunch and then everything marinates together really well. You can also just simmer it for 40 minutes, while your sweet potato bakes.

Roasted Sweet Potatoes

Ingredients

1 TBSP Coconut Oil, Melted

2 TBSP Jerk Spice (no salt added)

1/2 TSP Cayenne Pepper

2 TSP Cumin

1 TSP Himalayan Salt

1 TSP Black Pepper

Instructions

Preheat your oven to 350°F.

Chop your sweet potatoes into inch sized cubes. Spread your sweet potatoes out on a parchment paper-lined baking sheet. Toss your sweet potatoes in the melted coconut oil and the sprinkle the spices and seasonings on them and toss to coat evenly.

Bake your potatoes for 35-45 minutes or until soft and golden brown.

To make your Huevos Bowl, layer in a bowl your sweet potatoes and black beans. Top with one or two eggs, cooked however you desire. Add on your whatever toppings you like. I top my eggs with fresh guacamole, salsa or pico de gallo, and crispy tortilla chips.
